We were rushing to play Beatles, so Porthos commented normally we would have roasted them at 350 instead of 400. Beatles came first today though, but next time we'll get some more time to do a proper roast.

Prime Rib and the Beatles
Porthos and the Cardinal came over for some Rock Band: Beatles, so Porthos had the great idea of cooking up some Prime Rib. Got a phenomenal Rib Roast from Fairway and Porthos did the rest. Great times and tasty f'n roast - though the Beatles harmonies are damn tough to replicate.

Awesome time at Aramis's yesterday.
ReplyDeleteIf we had more time, I would have done up the beef a bit more fancy and made it more uniform in terms of doneness.
I think next time, a horseradish/garlic/rosemary outer marinade is in order.
And we'll go low and slow. 300 degrees for 2 and a half hours.
