pretty unappetizing...
but this looks about right. i presume it's cooked in salted water in the can (like most canned goods out there).
the raw chicken is cleaned, packed in the can, salted water is added and sealed. it's then cooked in a water bath for 30 minutes or so and cooled, then labeled, and packed in boxes for shipment.
the goo is pretty consistent with any liquid exposed to cartilage for a long period of time. tons of collagen will permeate out of the bones, making the broth gelatinous.
