Mee Fun Recipe

Felt like a light dinner the other day and decided to make a veggie rice noodle dish (chow mee fun). It was a fun healthy flavorful dish, but it is so much friggin work to prep all the ingredients. However, once your finished, you get a lot of bang for your buck, since you'll end up with a whole lotta food.

Ingredients
1 package dried rice noodle
5 dried chinese mushrooms
1/2 head chinese cabbage sliced
3 carrots peeled and julienned
3 chinese leeks julienned (or scallions)
3 cloves garlic minced
Bean Sprouts
Dried Shrimp
Salt
3 tbsp Soy Sauce
3 tbsp peanut oil
1 tbsp Sesame Oil
1/4 cup rice Wine

1) Cook the rice noodle in hot boiling water according to the package instructions (about 1-2 minutes usually). Rinse the noodle in cold water until cool. Set aside.
2) Put the dried mushroom in a bowl covered with warm water. Microwave for 1 minute and let sit for 5 minutes. This speeds up the softening process and letting it sit removes some of the intense mushroom flavor. Remove and slice into pieces.
3) In a wok, add peanut oil and set over high heat. Add, cabbage and carrots and cook until softened (about 3-5 minutes).
4) Add leeks, garlic, mushrooms, shrimp and cook for another 3 minutes.
5) Add the noodles, bean sprouts, soy, rice wine, and cook until well coated. Taste and re-season as necessary. You can serve immediately or eat it at room temperature.
