Matsugen (Jean Georges)

Boy is this place pricey.
But if you are looking for quality Soba... there's really no other place that does it this well.
Chef Kawada (formerly of Kai, now at Donguri) was the only other chef in the city that made Soba at this caliber.
"His soba was #1, he turned in his wings, Matsugen is now #1. They are going to Top Gun!"

In all seriousness, Matsugen, hands down, takes top honors.
Honmura An was another respectable soba joint. But if they were still in business, they would still play second to Matsugen.
And for those of you who are wondering about Sobaya, located in the east village... there's no comparison.
Different league all together.
Sobaya is great for the price, but really doesn't compare.
The boys at Matsugen make a superior buckwheat noodle. Extremely chewy and very distinct.
Add on to it some toppings and it just blows your socks off.
