There was so much hype for this place just a few months ago.
But the fact is, when you put egocentric people behind a restaurant (the Matsushita boys and good 'ol JG), and lose sight on the core fundamentals that make a good restaurant good, you are bound to fail in NYC.
The ONLY reason to go to Matsugen would be for top notch Soba. They really do a great job with their soba, but it's extremely pricey and unless you print 20's in your basement, it's not fun paying the bill at the end of the meal.
Basically, you gotta give your customers what they want. You can't preach nor can you force them to like your menu. And most importantly, if you're doing either of the first 2 things I just mentioned, you really can't charge people an arm and a leg for the experience.
I'm not saying California Rolls would have helped... but perhaps a few more guests would have come back...
Well, such is the fate for Matsugen.
"Chef JG... it's not your cooking... it's your attitude... everytime you're up there, you're unsafe..."
