Bolognese

After an inspirational meal at Babbo not too long ago, I felt the urge to make a batch of Bolognese at home.

Key ingredients : veal, guanciale, parm reg cheese and celery. As long as you don't skimp on these quality ingredients, I think it should turn out pretty darn good.
Very easy and very satisfying.

Recipe :
Guanciale
Onions
Carrots
Celery
Garlic
Ground Veal
Tomato Paste
Red Wine
Canned Whole Tomatoes (broken up)
Basil
Thyme
Parmegiano Reggiano Cheese
Milk
