After the gorging over Xmas break, I decided to do a veggie only meal that was light and delicious. This was inspired by my trip to Shanghai that had these real clean flavors. Sauteed shanghai bok choy was cooked with garlic and salt only - allows bok choy flavor to come out clearly. The soy beans were killer - sweet, salty, meaty, and a bit of sour. Pretty simple but delicious consisting of garlic, shallots, soy, xiao xing wine, and black vinegar.
