Drunken Chicken

This is a staple app dish at most Chinese restaurants.
Served chilled and usually accompanied with julienned jelly fish.

Clearly this was a free range Chicken. Notice the dark muscular meat on this bird.
Definitely firm texture with good Chinese wine and spice marinade.
