Kaisui Uni

Before I post my weekend Napa/SF trip in length, I just wanted to share one more piece of Uni with y'all.

This looks a little different from the sea urchin we get in the states. Well it's Hokkaido Bafun Uni for one. But two, it's not packed in wooden boxes like the rest. It's actually left to brine in an ocean water solution. The texture is a little softer than normal, but flavor-wise, very sweet and well rounded.
